The only food in the cooler at the time of the inspection was milk (45°F acceptable) and shredded cheese which should be 41°F or less as needed. It will be voluntarily rejected. The refrigeration unit will be assessed and serviced as needed, and the results will be emailed to the inspector. Trash and debris under and around equipment and shelves. Hood edges and fire extinguisher heads are not wiped clean allowing for potential contamination while cooking. Assorted containers contained food residue and were not clean to sight and touch. Meat slicer poorly cleaned after use. Ice machines are not cleaned at a frequency to prevent the presence of mold. Mouse droppings observed at several locations upstairs and downstairs of the facility indicating rodent activity.
